Nestled in the rolling hills of Mulmur near Mansfield, Ontario is 80-acre Toad Hole Farm, owned and operated for over 25 years by Niels Pearson. For those of you with appetites for delicious, grass-fed beef, Toad Hole offers an opportunity for “farm to fork” purchasing of different-sized packages for different-sized freezers (and budgets).
Niels cuts his own hay, which is a long, hot process every summer, but our cattle benefit from this all winter. Our closed herd roams the various pastures year-round eating grass and hay grown without antibiotics or pesticides. They are never given growth hormones. The cattle are born on the farm and enjoy an abundance of spring-fed water in every field. The beef is processed in small abattoirs nearby where it ages for about 18 days before being cut, wrapped, labelled and flash frozen.
Grass-fed beef is leaner than conventional grain-fattened beef. Niels has been raising cattle for more than 20 years, but we have only recently started reaching out to a larger market who appreciates local farm buying and good beef.
